Passion Fruit Mojito

75 ml dark rum
1 tsp (heaped) Muscovado sugar
6 lime wedges
10 - 12 mint leaves
25 ml passion-fruit puree
50 ml soda
2/3 of a glass crushed ice

CRUSH WELL, lime, sugar, soda, 8 to 10 limes leaves and a tea spoon of crushed ice, THEN ADD, ice, passion fruit and rum, THEN, mix vigorously for one minute, and garnish with rest of mint and a straw.

Pineapple Mint Mojito

2 oz pineapple rum
1/2 oz pineapple juice
4 lime wedges
12 Pineapple mint Leaves
1/4 oz simple syrup

Lightly muddle lime and pineapple mint leaves with simple syrup in sugar-rimmed collins glass and then fill with ice. In cocktail shaker, briefly shake rum and pineapple juice with ice and strain into glass and top with a splash of club soda. Garnish with a pineapple wedge.

Watermelon Mojito

4 ounces fresh watermelon, seeds removed, and cut into small cubes3
4 lime, cut into 3 pieces
5-6 fresh mint leaves
1 teaspoon sugar
1 ounce simple syrup
Ice cubes
2 ounces light rum
3 ounces club soda

Muddle watermelon, lime, mint, and sugar in the bottom of glass. Add rum and simple syrup.   Fill the glass to the top with ice cubes.   Top with club soda.   Cover the glass with a cocktail tin or transfer to a cocktail shaker and shake vigorously for 2-3 seconds. Serve with straw. Garnish with melon wedge and sugar cane stick.
